1. Main emulsifying function
Emulsified essence preparation
As an oil-in-water (O/W) emulsifier, SAIB is widely used to prepare emulsified essence. It can be miscible with essence oil and disperse pigments, enhancing the stability of the flavor system. The maximum added amount in emulsified essence is 70g/kg (equivalent to 0.14g/kg in carbonated drinks).
Beverage stability control
Used for non-alcoholic beverages (such as carbonated drinks and cloudy fruit juices) to prevent "cyclization" (separation of oil phase into rings) and "emulsion precipitation," and maintain uniform turbidity. Combining the functions of a thickener and a relative density regulator, it avoids component stratification by increasing weight.
2. Other application areas
- Plasticizer: Used for plasticizing and modifying film, paint, and ink.
- Cosmetics/skin care products: Uses its emulsifying and dispersing properties to stabilize the lotion system.
- Preservation assistance: As an auxiliary ingredient of preservatives, it extends the shelf life of food.
